I am a huge fan of soup, especially when I am feeling under the weather. I usually keep random beans and veggies in the house, and right now my pantry and fridge are pretty bare (I hate grocery shopping during pregnancies). So, I took a basic bean soup I have made and added some tasty ingredients I had in my house!!! My 1 year old, nicknamed Prince Parker ate two bowls of it!!! It's very tasty,easy, and cheap. I will do a few things different next time, but I am happy with the result today :)
1can black beans, drained
1 can white beans, drained (great northern beans
1 carton (32oz) of chicken broth
1 carrot chopped (next time I am using two)
1/2 package of frozen spinach. I am definetely using fresh next time for that great texture and flavor!!!
3 clove of garlic, chopped
2 slices of bacon
2 cups of water
About a teaspoon of celery salt and pepper
First cook the bacon in a large pot. I left it in strips but you can cut it up prior to cooking. Then add your carrots and garlic once the bacon is cooked through. Sauté those veggies in that yummy bacon grease! (You will thank me later while on the treadmill). Then, add the chicken broth and water. Make sure to get all the bacon drippings from the bottom for all that great flavor! Add your beans and spinach, ( I added my spinach frozen and it was fine). Bring to a boil, then add your pepper and celery salt....and then let summer for about 20 minutes.
Next time, I will use more carrots, an onion, fresh spinach, and maybe throw in some zucchini. The color of this soup is gorgeous and I was pleased with the flavor and textures! Oh, and did I mention it is so filling!? I am not a fan of chicken right now, but I am sure that shredded chicken would be fantastic in this!
