Crockpot Chicken Tacos

Now that we live in Tucson, and the Mexican culture is huge here, I wanted to get very good at cooking Mexican Food! I have almost perfected such an easy, healthy, and DELICIOUS shredded Chicken taco (longest run on sentence, ever).

Next time I make them, I will have to post a picture of the yumminess!!!

I have done this several times, in several ways. I am just going to give you the base recipe, and you can change it up..add to it as your taste buds tell you to.

- 3-5 Boneless, skinless Chicken Breasts
- I can Stewed Tomatoes
- About 1 cup of Salsa (I use Mild Pace)
- 1 can chopped green chiles (not sure the ounces, it's the smallest can they have)
- 1  yellow onion,chopped
- 2 garlic gloves, chopped

I just throw everything into a crockpot. I have put frozen chicken breasts in the crock pot at 2pm, put the crock pot on High for 2 hours and just kept stirring it every 30 minutes..and then on low for the last hour. The best flavor is if you put it in the crockpot in the morning and cook on low, with thawed chicken breast. Either way, it's delicious!!!

After the chicken is cooked through, you can usually just touch the chicken and it falls apart. I then, shred the chicken and stir all of the yummy goodness together and set my crock pot to Warm. The Chicken will soak up some of the juices.

I serve the chicken on tortillas with black beans and cheese. My husband like sour cream on his. I have also had it served over rice, brown rice, or just the chicken with black beans! I am sure a Mexican Blend Rice would be tasty!!!!

Other things to add to the crockpot are:

Taco Seasoning Pack
Jalepeno's
Salt
Pepper
Garlic Powder
Can Corn
Cilantro

My Hallelujah

We all have our opinions on tattoos, ink, tats....what ever you might call it. I love tattoos, if they are presented in the right way. But, as I said, that is MY opinion.

I got my first tattoo when I was 18. I decided to go with the lower back, also known as the "tramp stamp". It's a black butterfly that is about the size of a quarter. My husband loves it. Not.

My second tattoo is on my right inner forearm. I was feeling "old" with turning 25, and my husband took me to a tattoo shop one night. We had been talking about me getting another anyways. Well, I wasn't going to let a woman that just finished smoking a bowl of crack (not sure if you even smoke crack, sniff it, or inject...HAHA), touch my arm with a damn needle! So....we went the following day and the kid that was doing it looked like it was his first tattoo EVER!! Aahhhhh Well, I chose what I wanted...and I now have a flower on my forearm. It's okay. Not my favorite. It reminds me of right before I got married, so that makes me happy inside.

Now, my FAV tattoo is the one I got recently. I had been thinking about it for months. I wanted something that really had meaning. I made an appointment with a girl that did an amazing job on my husbands, brought a great friend with me, and bam. Between the three of us, I have my favorite tattoo. Most are probably curious WHY I am writing about tats. Well, this is a good TIP!!!! Before getting a tattoo, do your research. Choose a well known shop and artist. Ask to see their work. Some people are better at portraits, shadowing, florals, animals, and make sure they are CLEAN!!! I knew about what I wanted, but not sure on the font. Well, my friend and the tattoo artist both said "well, write it out." So I wrote out what I wanted it to say. There we had it. That's exactly what I wanted. A piece on me that reminded me of my boys and husband, and original. And nothing more original than in your own handwriting.
Hallelujah is a beautiful song. My husband sings it to my boys every night, and now my 2 1/2 year old is singing it to us. I love it when people ask me why I got it and what it means. I also chose a place that I can see it (my left forearm). I don't understand why some people like to hide them. I understand that in some work environments, it's not professional. Some look down on others for them. Well, it's my body...I am not a low class, classless woman. I am a proud mother and wife that has class, and I wear my ink proud. :)

Baking Soda is my new Esthetician

I have pretty good skin for being almost..cough cough...30!!! aaahhh, I know I know. It's not OLD, but it still doesn't sit well with me just yet ;) I have always taken great care of my skin. Wash it, moisturize, wear makeup to protect your skin from the sun/enviroment, stay hydrated and get plenty of sleep. My Grandmother and my Mother have AMAZING skin, so I have great genes...but I still want to take care of it. It's the only skin I will have, so why not??!!??

I have had several microdermabrasions, facials, glycolic treatments, and peels. Love them all and not bashing them....there are definetely some things to be left to the professional. BUT, I dont have much time to get to the Spa like I used to. I used to work in a Day Spa as a licsensed Cosmetologist, and we would exchange services all of the time...awesome, right? I know!!!

I have a few friends that use Baking Soda and water at home. And, I have found a few different recipes for at home microdermabrasion. So, I decided to try just the basic one.

3Tablespoons of Baking Soda
1 Tablespoon of Water
It will be very thick. Apply on your face in a circular motion. Sit for up to 5 minutes and rinse with warm water.

Okay. Before you try it....it does burn a bit. I have sensitive skin, and I did leave it on for 5 minutes. Next time, I will leave it on for about 3. Baking Soda has a very high Alkalinity, so I will be putting in fresh orange juice or lemon juice in it next time.

HOWEVER, my skin looks AMAZING!!!! I will definetely do this again! I had a compliment from a friend the very next day and I wasn't wearing any makeup!!! Woot woot!!!! The Blog I found this on, said to do this once a week. I HIGHLY do NOT recommend that. I would say maybe twice a month at the most. But, as I said before...there are some things that need to be left in the hands of a professional. ;) Here are some before, during, and after pictures of my results.

This was the next morning. I was in a different bathroom, so the lighting is a lil different. But, you can still see a difference in my skin. No makeup....WHAT??? Yes, it is amazing.

Jalepeno Cornbread Poppers

I saw this recipe on Pinterest and HAD to try it!!! A sweet cornbread combined with Jalepeno's...holy taste bud explosion!!! We didn't have huge plans for Super Bowl, but I decided to make a few tasty treats, and this was definetely on the list!!!

This time of year, Jalepeno's aren't expensive at all. If you like spice, get the ones that have more wrinkles. We don't like that much kick, so I chose the not so wrinkly ones. Also, you want to purchase gloves if you don't have any laying around. I own a huge box of disposable latex gloves (I do hair as well).

The recipe I found called for a cup of corn. I used an entire can and pretty sure that's a lil more than a cup. I did drain and rinse the corn. I LOVE Jiffy Cornbread mix, I mean...who doesn't??? And the only cheese I use is Sargento Brand. I decided to use the Mexican Blend cheese and I am so happy I did.





Preheat your oven to 350. Put on your gloves, wash the Jalepeno's, and cut them in half..long ways. Take out the veins and seeds. I put them in a small bowl so I could discard them easily. I didn't want my kids or dogs finding a few seeds and playing with them..ouch!






In a large mixing bowl, mix cornbread according to box directions. Instead of using several bowls (I hate dishes) I just added 1/2 cup of cheese to that mixture, and can of corn to it. Mix it up....








Take a cooling rack and place it on a cookie sheet. I always put foil down on the cookie sheet so I don't have to wash ANOTHER thing in case anything drips off the cooling rack. Spray the cooling rack with a cooking spray. Fill the Jalepeno's with the cornbread/cheese mixture. They will rise, so do not over fill them. Then, sprinkle the tops with some cheese. Bake at 350 for about 20 minutes or until the cornbread is cooked all the way through.







These are seriously delish!!! I will definetely be making these again!!!! Oh, and BTW....make sure you wash your hands after dealing with Jalepeno's, even if you are wearing gloves. They are sneaky little bastards and can burn the crap out of your skin.
