Crockpot Chicken Tacos

Now that we live in Tucson, and the Mexican culture is huge here, I wanted to get very good at cooking Mexican Food! I have almost perfected such an easy, healthy, and DELICIOUS shredded Chicken taco (longest run on sentence, ever).

Next time I make them, I will have to post a picture of the yumminess!!!

I have done this several times, in several ways. I am just going to give you the base recipe, and you can change it up..add to it as your taste buds tell you to.

- 3-5 Boneless, skinless Chicken Breasts
- I can Stewed Tomatoes
- About 1 cup of Salsa (I use Mild Pace)
- 1 can chopped green chiles (not sure the ounces, it's the smallest can they have)
- 1  yellow onion,chopped
- 2 garlic gloves, chopped

I just throw everything into a crockpot. I have put frozen chicken breasts in the crock pot at 2pm, put the crock pot on High for 2 hours and just kept stirring it every 30 minutes..and then on low for the last hour. The best flavor is if you put it in the crockpot in the morning and cook on low, with thawed chicken breast. Either way, it's delicious!!!

After the chicken is cooked through, you can usually just touch the chicken and it falls apart. I then, shred the chicken and stir all of the yummy goodness together and set my crock pot to Warm. The Chicken will soak up some of the juices.

I serve the chicken on tortillas with black beans and cheese. My husband like sour cream on his. I have also had it served over rice, brown rice, or just the chicken with black beans! I am sure a Mexican Blend Rice would be tasty!!!!

Other things to add to the crockpot are:

Taco Seasoning Pack
Jalepeno's
Salt
Pepper
Garlic Powder
Can Corn
Cilantro
